
After fasting and detoxing with juice, herbs, or water, it’s time to break the fast, but gently! I usually break a fast with vegetable broth or a nice cold-pressed juice or smoothie. Then my first official meal is a nice warm cup of vegetable soup. This is my go-to because it’s easy for your digestive system to process and digest. The warming spices help stimulate digestion while the herbs support the liver specifically by helping to detoxify it and replenish the minerals. So let's get into it.
Ingredients:
- 1 onion, chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- carrots, chopped
- mushroom, chopped
- 1 sweet potato, peeled and chopped
- 1 cup chopped kale or spinach
- 6 cups vegetable broth
- 1 tsp turmeric powder
- 1 tsp ground cumin
- Salt and pepper to taste
- Parsley
- Fresh lime juice (optional)
Instructions:

In a large pot, heat some Avocado oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until fragrant and onions are translucent.

Add chopped carrots, mushroom, sweet potato, and chopped kale/spinach to the pot. Stir that thang up and cook for a few minutes.

Pour in the vegetable broth and bring the soup to a boil. Reduce heat to low, cover, and simmer for about 20-25 minutes or until the vegetables are tender.

Season the soup with turmeric powder, ground cumin, salt, and pepper, parsley, and onion powder. Stir well to combine.

Extra option: Using an immersion blender or regular blender, puree the soup until smooth and creamy.
